Prattigauer is a washed-rind, raw cow's milk Alpage-style cheese aged by master affineur Rolf Beeler near Zurich, Switzerland. Much like Appenzeller in texture, Prattigauer has an intensely robust flavor that is nutty, rich and lingering.
