Raschera Cheese DOP. Price per quarter wheel  4.5/lb. Italian Raschera cheese DOP is matured for at least one month. It has a raw, pressed and semi hard paste. Raschera cheese has a fine and delicate flavour, slightly spicy and salty if well matured. The texture of this Italian Cheese is consistant, elastic, with small irregular holes dotted throughout the cheese. Raschera Cheese can be found in white or ivory colours.
